1 pound chicken about 2 chicken breasts
1 tablespoon Jimmy Jack's Rib Rub
3/4 cup Jimmy Jack's BBQ Sauce
13 oz favorite tortilla chips
2 tomatoes diced small
1 cup finely chopped green onions
1/2 cup sliced black olives
1 jalapeño, seeds removed and diced small can add more to your liking
2 1⁄2 cups shredded colby jack cheese
Preheat oven to 350 F and prepare rimmed baking dish by lining with aluminum foil. Prep your toppings chop your tomatoes and green onions. Season chicken breast with Jimmy Jack's Rib Rub and brown over medium high heat.
Shred cooked cooked chicken with a fork and return to sauté pan combine with Cowboy sauce. Mix and coat chicken and sauce completely. Place tortillas chips on prepared baking dish, spreading to the edges. Spread chicken evenly over tortilla chips. Follow with shredded cheese.
Bake for 7-10 minutes or until cheese is melted. Sprinkle olives, jalapeños, tomatoes, and green onions evenly.
